There has been an increasing number of food poisoning cases being linked to antibiotic-resistant salmonella strains

It does not receive the kind of attention from federal regulators that it deserves, but the increasing number of food poisoning cases being linked to antibiotic-resistant salmonella strains is definitely a matter of concern to San Diego food poisoning lawyers.

Earlier this month, ground beef in Maine was found contaminated with an antibiotic-resistant strain of salmonella. The salmonella-tainted beef in Maine led to 16 people contracting food poisoning.

The strain of salmonella that has been linked to the main ground beef epidemic is one of 4 strains of salmonella that have become resistant to antibiotics.  Consumer safety groups have been worried about this, and have been petitioning federal agencies to take more action to prevent the spread of food poisoning caused by antibiotic-resistant strains.  The Center for Science in the Public Interest recently petitioned the Department of Agriculture to ban the sale of poultry, meat or any other products that contain the 4 antibiotic-resistant strains of salmonella.  The Department Of Agriculture says that it will consider the petition.

For now, federal safety and health regulators do not seem to be overly concerned about antibiotic-resistant salmonella strains that are increasingly being linked to food poisoning cases.  According to them, proper cooking can eliminate the bacteria and make the meat safe to eat.  However, in 2011, hundreds of people were sickened from food poisoning that was caused by the antibiotic–resistant strains of salmonella in their meat.

The increasing number of food poisoning cases that have been linked to salmonella strains that are resistant to antibiotics is especially concerning because of the greater risk of outbreaks causing serious illnesses and fatalities. In the absence of prescription drugs that can work on these bacteria to eliminate them, the risks of a widespread and devastating epidemic are very real.

This year at least, several of outbreaks of salmonella food poisoning have been linked to these antibiotic -resistant strains.  Earlier this year, one outbreak of salmonella poisoning was linked to ground turkey that was contaminated by an antibiotic-resistant strain.  One person was killed in that outbreak, and at least 135 people fell sick.  Also this year, the Jenny-O Turkey Store had to recall tens of thousands of pounds of turkey after these were found contaminated with an antibiotic-resistant strain.  This outbreak led to three people being sickened and hospitalized.

While cooking meat and poultry can kill bacteria, the problem is that many people do not bother to cook meat that well.  Many people don’t use a thermometer to make sure that their meat has been cooked right through, and to the desired temperature.  Additionally, meat may be contaminated by raw meat juices that can spill over or splash on cooked food.
